Just Add Cream!



OK, I've talked enough about roasting tomatoes, and since I don't want to borrow any more ovens (Thank you, Jeannie and Kathie!), I came up with something new. (Yes, these beauties are still coming out of our garden!)



Using the exact same ingredients as my roasted tomato recipe, start by sauteing garlic in olive oil.



Add tomatoes - any kind, skins, seeds and all (no stems!)



Add fresh basil, salt, pepper, sugar, fill one big pot.



Cook ingredients on the stove, boiling, then simmering for 45 minutes.

Allow to cool.



Puree in the blender.



Pour into Ziploc bags.  And I marked, "just add cream."

This might sound funny, but I'm always thinking ahead for my family ( just in case something happens to me), so my family will know what to do!

In this case, defrost, and just add the cream = tomato soup, right?



Yummy.

I think I feel a winter night's dinner of Toasted Cheese and Tomato Soup coming on!

That looks great! I've always thought about that and with a load of tomatoes waiting to be harvested I need to come up with some ideas for them...now I wonder how I could make that dairy free?

That's the all time favorite meal at camp. Tomato soup and toasted cheese sandwiches... Sounds real good. Your tomato soup mixture looks fabulous...

Fabulously simple! Thank you! I usually bottle my tomatoes and then make the soup when I open the bottle but this looks so much easier. I have some tomatoes that are still good but not canning worthy. I will have to try this. Thanks for sharing.

My grandmother, who grew up in the Depression, used to make tomato soup like this and if she didn't have fresh tomatoes she would buy canned. It is by far my favourite and always reminds me of her.

yum! Costco has apparently stopped carrying the kind we got there so we may have to try it. They have also stopped carrying the "good" chocolate chips. :( Thanks for this idea. Kelly
