Hooked on Roasting Tomatoes!



Erin, have you cut a tomato before?

Nope!

Well, grab a knife, girl, I'm gonna show you how!

If you're saying you have too many tomatoes, then let me share with you a fast, easy way to use them up!



It's easy. And I just got my daughter and her friend to do it for me (as I guided them).

I love working with kids in the kitchen, especially if they have a good attitude and they want to learn.

Cut up any kind of tomato into pieces. (We have 5 different kinds this year - cherry work great, too!)



Chop fresh basil.




Press fresh garlic.



Add salt, pepper, sugar, and drizzle with olive oil.  Roast at 450 for 45 minutes, or longer, depending on how dry you like them.

Then you can do several things. 

Eat right away.
Freeze in Ziplocs as is.
Puree' and freeze.

Once you try this method, you'll be hooked!

Looks really good! My favorite way to eat tomatoes is with cucumbers, onion, lemon, salt and pepper...

The best way to eat a tomato is like an apple. You have a whole tomato in one hand and a salt shaker in the other hand. Yummy!

I sure WISH I had an abundance of tomatos! I don't have ONE! BUT, I may just see if I can buy some today to try this, sounds YUMMY!!!!!!!

Great idea! My grandma has bags full for me. We use so many tomatoes. This will be a great way to have them on hand for winter recipes. I am going to freeze mine :)

I am going to try this recipe tomorrow!!! very time I go out to my garden I have a new batch of tomatoes--I have so many right now and I have been trying to figure out to with them... I love the idea of freezing them!

I've been using your recipe since last summer, and we love it! I'm about to do another batch today or tomorrow, maybe two, since the tomatoes are coming in now. It is the best. Have you ever tried canning it?
