First Tomato ...



Last week we enjoyed our first tomato from our garden.

It was tasty on our Strawberry Pulled Pork Tacos.



Last year our tomatoes were out of control, as we didn't stake them up (bad idea!)

I really wanted to buy these, but we didn't get around to buying them.

So we used the inexpensive cages that we bought at the Grange, as well as some that we purchased at yard sales.

And this year - we're in for a bumper crop!

I  really can't wait to make this dish ...



What is your favorite way to eat tomatoes in the summertime?

I like to eat tomato sandwiches.

Just tomato, a slice of swiss cheese, mayo, lettuce, and a little salt and pepper.

My grandmother always made them for me when I stayed with her, and they just remind me of summers on her patio.

We have a number of tomatos on the vine, but they are still green. I can't wait until they are ripe!!

I love sandwiches and I also can't wait to make salsa!!

I think they are best just fresh from the garden and sprinkled with salt and pepper, but I also like to bake them...I use this method if they get over-ripe before I can eat them.

Slice them in half and place open side up in baking dish. Drizzle with olive oil, and sprinkle with basil, oregano, thyme, and parmesan cheese. Bake at 400 for 20-30 minutes.

YUM!!!

Wow! Our tomato vines are huge, there are lots of blossoms and a few little green balls but nothing near a real red tomato. I don't think we've had enough heat here by the Bay.

Tomato, basil and mozzarela - can't wait.

My favorite way to use fresh tomatoes is to eat them while they are still warm, right off the vine (after a good rinse of course)...mine are a little late and haven't fruited yet, but I'm enjoying my pineapples right now. :)

One summer I ate a tomato sandwich for every meal, including breakfast!

Mmm..favorite way? I have two: first, for cherry tomatoes, pull 'em off the vine while they're still warm from the sun, and pop 'em into your mouth whole so they explode with flavor :-)

Second, slice and lightly saute in olive oil and Italian herbs & basil--top with Parmesan or Romano.

Those tomatoes look great! I wish more of mine were ripe.

Yippee! I can't wait! Yours look grat! Mine are green still, but I know the time is coming!! :) We have jalapenos too so salsa is pending! YUM!

Our tomatoe plants have taken off and I'm hoping we'll get many tomatoes off the vine.

We like them on salads, salsa, burgers and Sammie

Those dishes look so good. I eat toast with cream cheese, sliced tomato and salt/pepper all the time. But my favorite is sliced grape tomatoes, fresh moz., basil, balsamic and crusty, fresh bread!

When the tomatoes are ripe and delicious, I slice and arrange them on a platter, drizzle with Paul Newman's Italiano, garnish with finely chopped green onions and crumbled bleu cheese. Yum!

Yum! Can't wait for ours to be ready-my favorite is crusty bread, balsamic vinegar and basil-that's all I need. (well, cheese would be nice too....)

toast an everything bagel (lots of seeds, etc). Spread with cream cheese and top with thinly sliced tomato and a pinch of salt. Perfection!

Nothing says Summer more than the smell of tomatoes fresh from the garden. I'll be serving them up drizzled with Fustini's fabulous olive oil and balmsamic vinegar and sprinkled with green scallions or parsley!

My favorite thing is a BLT sandwich. But, I won't eat real bacon so I substitute Bacos for the bacon. All the flavor and no guilt! I wish I had enough sun to grow vegetables!

BLT's! or scrambled eggs, toast, and a side of fresh sliced tomatoes, or fresh homemade salsa, or...I can go on and on. Delicious! We didn't grow any tomatoes this year but three houses down from us is a wonderful stand with fresh local produce.

Crispy bacon, sliced tomatoes, and Miracle Whip on buttered toast! And we LOVE your roasted tomato sauce recipe. No ripe tomatoes here in southern Ontario yet, though. Leslie

My favorite way to eat tomatoes?? FRIED GREEN TOMATOES!!!! Best dish without a doubt. Oh how I miss them! Other than that, I pick them straight from the vine and eat them with salt.

I love good old fashioned tomato and cucumber salad. Or just sprinkle some cajun seasoning on fresh tomatoes...delish.
