We don't let a bit go to Waste!

I cannot help but write about our leftover Easter ham!

And, of course, announce the winners of the "2" canvas
customized prints!

But first, let's talk about ham.  

I have great memories growing up with ham, as my mother usually cooked it at holiday time.  Sometimes at Christmas, always at Easter.  

Monday night I realized I did not have any dinner plans!  

Yes, sometimes I fly by the seat of my pants.  Okay, much of the time I fly by the seat of my pants.


My son Garrett and I got creative in the kitchen as we added the leftover Easter dinner ingredients together like ham and asparagus, and then eggs, cheese, milk, sour cream and bread!


We popped our casserole in the oven for 40 minutes and had a lovely leftover meal!

I have such warm memories, thinking back to our wonderful Easter day, celebrating the resurrection of Christ and the gift of friends and family!


And a meal where everyone contributed ...


Music from the kids ...


A walk through the garden and greenhouses ...

Amazing desserts ...


Naps later that day, and then back to the kitchen in the evening for more rolls and ham.

We don't let a bit of our leftovers go to waste in our home.

Looks like you had a wonderful time with family~ Everyone looks so very nice and the food looks amazing.

We froze the leftover ham to use for soup, ham biscuits, quiche, etc. I save the ham bone seperate to use in a pot of soup. It makes the best soup. Your casserole sounds great, I will have to give it a try. Jackie

I made ham salad for sandwiches. Very yummy. I need to make egg salad now with all those colored eggs. If anyone has any other suggestions for those I would love to hear them.

Leftover ham is the best! I made my husband make the biggest ham he could find just so that we would have lots of leftover ham to use for other meals. Last night, I made a great version of ham and bean soup with lots of veggies. I even cut up the apples that were left over from the kids apple dippers (McDonalds) and put them in, too. I made enough for dinner and then two lunches this week for myself...Yeah! Oh, and another great thing...I used some of the herbs I have growing in our garden.

we are still enjoying our leftovers. The lemon cake went the next day, but we opted for pork (not ham) this year and today will be the final day it still is feeding us.

I put the ham bone (with lots of meat still on) in the freezer and we are looking forward to a big pot of split pea soup next week. Tonight we will be eating the leftover ham, asparagus, fruit salad and rolls for a quick and easy dinner after Boy Scouts! Thanks for the great caserole idea...might even try to "wing it" without a recipe...kinda like a big quiche. Yum!

Oh my - that casserole looks delish - I am the only one in my family that likes (LOVES!) asparagus though. I marinated mine in a little italian dressing and grilled them - SOOO yummy!!

lol - I noticed the pin too - should we have a club??

Great idea with the leftovers! Sometimes making something "new" with the leftovers adds a little twist to the traditional!

We loved the ham and cheese sandwiches for a day. Then per hubby request, yesterday I put cut the remaining ham off the bone, threw both in a pot of white beans and let 'em cook for several hours. Meanwhile, I made some bread in the bread machine to go with it.

Delicious:) At the same time, also decided to use two overly ripe bananas in banana bread.

So today we are still --as my dad used to say-eating "high on the hog"!:)

Ham sandwiches first, ham and cheese omelets, then ham and potato soup!
I froze the remaining coconut cake for a little dessert on another day.
'Didn't want to overindulge.

our leftover ham and turkey usually just get eaten as a second holiday meal, along with the leftover green beans, potatoes, rolls, etc, etc. :)

Sandy, I really appreciate you sharing about that casserole. What a great way to use tasty odds and ends. I will have to do more of that...I usually throw everything in a soup, but I'm tired of doing that!
