Easy as 1,2,3 Casserole & Wild-Wool Giveaway!

If you grew up in my era, then you probably ate more than enough of this chicken and rice casserole!

Honestly, I think it was a staple in my home. My mom made it a lot – with either chicken or pork chops!

Thursday night I was in a rush. I had just finished work and was off to my daughter’s first basketball game of the season. I knew I had chicken breasts defrosted, but I had to think of something, and quick!

Immediately I thought, what would my mom have made, and this simple recipe came to mind.


Chicken Rice Casserole
Chicken breasts
1 cup brown rice
1 can your choice cream of … soup
1 packet Italian seasoning mix
2 cups boiling water
Salt & pepper, or your favorite seasonings

Always keep extra soup packets on hand


3 easy ingredients


Mix together with 2 cups of boiling water


Pour into a 9x13 pan, adding chicken breasts on top


Just like my mom – sprinkle paprika on top! It's just what she did! It’s ready for baking!


Instructional “love” note
Running out the door, I left my son an instructional note. I’m a working mom, so my kids are getting more efficient with following my dinner directions!

Cover with foil and bake for 1 hour and 20 minutes. Put in oven at 350. And my notes are always signed - Love, Mom


Take foil off; bake another 15-20 minutes


It doesn’t have to be gourmet
A meal that I enjoyed 45 years ago is a family pleaser every time! I’m not sure I’d necessarily entertain with this dish, but if I were in a pinch for time, why not? After all, entertaining is not about impressing or gourmet dishes!

My 1,2,3 meal... Oven Roasted Chicken Breasts. In a cast-iron skillet, season chicken with salt, pepper, minced garlic, chopped onion, and rosemary. Top with a drizzle of olive oil and a few pats of butter. Bake at 400 for 40 minutes, flipping chicken after the first 10 minutes. Serve with a starch or over greens. Delish!

What a great giveaway! One of my biggest hits in the quick dinner world is Enchilada Casserole! Brown a pound of ground beef and mix meat with a can of cream of chicken and some sour cream and some cheddar cheese, cut up corn tortillas, make a layer in pan, then add a layer of the meat and cheese mixture, then a layer of tortillas, then the meat/cheese mixture..top with a layer of tortillas and then cheddar cheese... Bake at 350 for about 45 minutes covered with foil, then remove foil and cook till cheese browns!
It is sooooooooooo yummy! everyone I have ever made if for can't stop talking about it!

Sometimes to jazz it up, I add a can of rotel or just some diced jalepenos!

Your chicken recipe is similar to mine. I've never put the italian seasoning into it. Can't go wrong with those ingredients!

For our family, my go to quick meal is often tacos. One pound of ground beef with some taco seasoning..I always have lettuce, tomato, and cheese. It's good every single time!

YES YES YES..we ate that casserole as a child..I can still envision that paprika on top but it is quick and easy! That is a "keeper"

Our quick and easy meal, which we had for lunch today, is taco salad. We use leftover ground hamburger or turkey and add taco sauce, lettuce, cheese, doritos or nachos, and any other good taco salad fillers that are in the fridge.
Yummy!

One of my favorite sunday lunches is Roast Beef. We had this almost every Sunday as a child. It is so simple! I freeze my roasts so I just put my frozen roast in my crock pot on Saturday night. Pour one glass of water over it, cover it with onion soup mix, turn on low.In the morning I cover the roast with yellow potatoes and carrots. Sprinkle with salt and turn on high. When we come home from church we have dinner smells so sweet!!!Add a green salad and lunch is ready to serve!:)

One of our family favorites for a quick meal is grilled cheese sandwiches and tomato soup. Quick and delicious!!

I love the scarf! My 1,2,3 meal is a simple version of chicken parmesan. Baked chicken breasts (or patties), tomato sauce, and mozzarella cheese - broil to melt cheese. Serve on top of spaghetti. Easy and a favorite of my husbands! :)

Beautiful scarves! Our standby, quick-fix dinner is burritos. Simply open a can of beans, shred some cheese, top with lettuce, tomato, salsa & yogurt (we're weird, I know, but it does act as a great stand-in for sour cream!). Yum!

Chicken enchiladas! Cooked chicken mixed with sour cream, cheese and chili powder, rolled in tortillas, topped with a jar of salsa and more cheese, baked @ 350 for 25 minutes. Delish, and quick. Love your new format:>)

My easiest meal is chili-brown hamburger, cook noodles, add tomatoes and seasonings and viola, a great meal for a cold day.

Up here in MN the land of the "hot dish" it's tater tot hot dish


1 can cream of celery soup
1 can cream of chicken soup
2 lbs. hamburger (browned)
1 bag mixed frozen vegetables

Mix in half of the tator tots and top with the rest

Top with tator tots

Definitely tacos. So easy and so yummy. Had it last night and then for an after-church-quickie we just had taco salad.

Oh, I'm going to have to make that! Someone brought it when I had my fourth child, and my other children loved it!

Here's my favorite. I almost always have all the ingredients but shrimp on hand.

Mama's Shrimp

In a large, heavy skillet over med-high heat, combine all or whatever you have available of the following:
* lemon, juiced (throw that in), then sliced thinly
* garlic, minced
* scallions, chopped
* olive oil, about 2 T.
* sea or kosher salt, to taste
* fresh ground pepper. to taste
* 1/4 c.'ish white wine
* cherry or plum tomatoes, halved, I like a lot of them

Sautee that stuff around, while you put on some good pasta to boil.

Add shrimp to skillet and cook til just pink.

Serve skillet concoction over drained pasta. Yummo! And your kids can pick out whatever they don't like.

My favorite 1,2,3 dish would have to involve egg noodles, cream and chicken. If I have these three ingredients, I have a meal. Once I have the barebones cooking I add whatever spices/cheese/vegetables I desire. The kids really like parmesan and peas mixed in.
Sounds a little crazy but it's very delish!

my go to meal? Poppyseed Chicken.
Par boil 3-4 chicken breasts. Crush 2 sleeves of Ritz crackers and melt 6 tablespoons butter. Set aside. Mix 1 can cream of chick or mushroom (you pick), 4 or 5oz. sour cream and cubed chicken. Pour into 9x13 pan, top with crackers and drizzle on butter. Sprinkle on poppyseeds (optional). Cook for 30 mins @ 350. Serve over rice with your fav vegetable.

Hi Sandy,

One of our favorite 1,2,3 meals is the 1905 Salad. It's a regional, yet famous salad here in Florida, (from the Columbia restaurant)quickly thrown together into a large bowl with the following ingredients:

* chopped romaine lettuce
* julienned turkey
* julienned Swiss cheese
* chopped tomatoes
* green olives
* grated parmesan cheese
* Any (garlic filled, olive oil based) salad dressing

Serve with store-bought French baguettes.

It's light yet satisfying and can literally be ready in 15 minutes.

My mom made the same chicken casserole! Comfort food indeed. My quick dinner is Asian Chicken Lettuce Wraps. Ground chicken or lean pork, sauteed with stirfry sauce, onions and sliced water chestnuts. Can add leftover rice and/or peas. Serve with lettuce leaves. My kids love to wrap their own! Thanks for introducing us to those beautiful scarves!

The scarf looks amazing! Anyway, my quick meal is chicken enchiladas. I use some cooked hamburger or chicken breast. I lay a tortilla out, put some meat down, drissle some Trader Joes Enchilada sauce and sprinkle some shredded cheese. Roll it up and put in the pan. After there are about 10 of them in a pan, I pour the rest of the sauce on it and toss the rest of the cheese onto the enchiladas. Bake in oven for 350 degrees for about 30 minutes. This is my favorite quicky meal. It is also the same meal that I make for woman that have just had babies. It is easy and tasty!

Thanks for your work by the way! I have made a new committment to our love for hospitality. We had countless people over now since the beginning of the year and have purposely blogged about each time. We have been having a lot of fun. We used to be like this all the time, but had been unable to for a season. How fun to be back at it again! Thanks!

With both my husband and I working in college ministry, our weeks can get really full and I'm often needing a quick and easy dish to get on the table at the end of the day that is still healthy.

I have a version of chicken & cheesy rice that is similar to yours but adds cheese.

Another fast and easy favorite is goulash. Brown off some lean ground beef & boil some whole wheat elbow macaroni. Mix beef & noodles with two cans of low sodium tomato soup in a casserole dish, then push cubes of 2% Velveeta down into the mixture throughout the dish. Sprinkle with fresh ground pepper, cover and bake until cheese is melty and casserole is hot and bubbly. Yum!

My easiest dinner, and one of our favorites has to be spaghetti and meatballs:
1.boil spaghetti
2: open up a can of Hunts Organic spaghetti sauce.
3:defrost ready cooked meatballs and add them to sauce!
+ salad and garlic bread - it's the best meal ever :)

Your chicken casserole recipe is one that my husband grew up eating, but we never did. I think he might enjoy it if I make if for him occasionally. Thanks for the recipe. Unless I am unusually organized and have precooked meals in our freezer, our "go to" quick dinner is usually tacos (already mentioned by several others).

I just found a really yummy 1,2,3 breakfast dish.

Brown breakfast sausage and onion in a pan (drain and return to pan) add cubed potatoes continue to cook until potatoes are soft. Wisk 9 eggs and pour in pan over sausage. Cook until eggs are set up. Remove from heat sprinkle with cheese and cover until cheese is melted.

Yummy!

Oh gosh - I am the mother of 6 very busy kids.....so I have lots of easy dinners - most of them involving my crock pot. This is the easiest and all the kids eat it(that is a bonus in itself). I just put thawed skinless, boneless chicken breasts in the crock pot, pour a can of cream of chicken or cream of mushroom soup over the top. A little salt and pepper - let it cook all day. I then boil some wide noodles and serve the chicken over the noodles.

My quickie supper is something my husband's grandmother made him and it's one of his favorite things to eat. Not my favorite but when I need something fast, it works!

Ground Meat and Potatoes
Brown ground meat
Add some chopped onion; cook a few minutes.
Add large diced potatoes.
add water to cover. Cook until potatoes are done to your liking.

He has to have Baked Beans along side. So open a can of Bush's Vegetarian Baked Beans and heat. And supper's ready!

I have a couple of fast, throw-together dinner meals I use. Being Italian I ALWAYS have a tupperware container of pasta sauce in the freezer. I pop that in the microwave to defrost while I boil some pasta. Pour the heated sauce over the cooked pasta and thus, dinner is served. Another quick meal is mac and cheese with hamburger. I brown some hamburger, tossing in some herbs and add that to a box of prepared mac and cheese. Yummy and quick. I also make chicken and rice casserole similar to yours.

The chicken sounds wonderful!!Smoked Sausage bake: Slice smoked sausage into thickish rounds.....cube washed potatoes (leave skins on 3-5 depends on servings needed) Add one chopped onion and one chopped green pepper. Pour about 1/2 bottle Italian dressing over and mix. Bake 350 for 35 to 40 mins or till potatoes are done. YUM :)

My go to supper is what we call "Dinner for 8 Chicken". It makes enough for eight (obviously) but you can halve it for a smaller family. The recipe is put eight skinless boneless chicken breasts in a 9x13 pan. Mix a small bottle of french dressing, a can of whole cranberries, and a packet of Lipton onion soup mix together. Pour on top of the chicken. Cover the pan with foil and bake in a preheated 350 oven for 1 hour. It is by far the easiest recipe I have and I make it all the time. No one can tell you did literally nothing to make it.

My "easy" night consists of throwing a few items together to simmer in our crock pot for about 4 hours on low or in a pinch less than 2 hours on high.
Throw together:
4 frozen chicken breasts
1 can of black beans
2 cups salsa
1/4 cup fresh cilantro, chopped

A couple of minutes before serving take the chicken out and shred on a plate. Return meat into crock pot and stir mixture together. Serve on whole wheat tortillas with cheese. Delicious!

one of my easiest meals is:BBQ chicken and for some reason my hubby loves it!

In the crockpot add:
4 chicken breasts
1 1/2 cups BBQ sauce
1 red onion, diced

Cook on low for 6-8 hours. I serve it with fresh grean beans. YUMMY!

My easiest 123 meal...chicken breasts thawed laid in a casserole dish..pour tomato sauce on top of them and bake at 350 for one hour and sprinkle with mozzarella cheese bake an additional 10 minutes....serve with green peas and carrots and bread....yum yum. That is my fast meal besides chicken and dumplins slow cooker style.

y easy got to meal is spaghetti. I use a jar sauce like Ragu or sometimes canned tomatoes. Brown some ground beef or ground italian sausage. Add sauce, salt, pepper, italian herb mix and then add cooked spaghetti. Serve with a salad and garlic toast. It's a 30 minute meal.

My easy recipe: 4-6 chicken breasts in a baking dish, mixed together: 1/2 jar apricot preserves, 1 packet onion soup mix, 1 cup thousand island dressing. Pour mixture over chicken. Bake in oven until done. Yummy!

I love the scarves and now with the bitter cold and ice coming this way, that would be perfect for toasty warm necks!

My 1,2,3,4,5 meal is delicious. good on the budget, easy and definitely a family pleaser!

In large pan brown a pound of ground beef.
Season meat with taco seasoning, add in 1 can of refried beans,
1 can of ranch style beans
and 1 can of rotel. (I use mild)

Next crush nacho flavored tortilla chips and pour into a 13x9 pan (sprayed with cooking spray) then pour meat mixture over chips.
Bake at 350 for 20 minutes, sprinke with shredded cheese and bake until melted.

You can serve it with sour cream and salsa. My teens and hubby love it!

BTW sometimes I leave out the refried beans and it is still tasty!

My MIL made a very similar chicken casserole except she added on extra "Cream of" soup and she used a packet of onion soup instead of Italian. Yum...

My 1,2,3 meal that I've used for ages... I start one pound of ground beef browning and add one cup of macaroni noodles (while the beef is browning). I like to add a teaspoon of chili powder at this time.

One must stir the mixture so the macaroni does not brown too much. Then I add one large can of Italian style tomatoes and about one half cup of water.

I let it simmer a few minutes, then turn the burner to low, and put a lid on it. I check to see if it needs another one half cup of water after about ten minutes.

If it doesn't, I turn the heat off at that time. You can tell when it is ready because the macaroni is finished cooking.

The real secret to the flavor is letting it cool a bit and stirring as it cools so the macaroni draws in all the flavor.

This is cheap, quick, and a favorite of the guys in my home.

My 1,2,3 meal is smiliar to yours. I cut up chicken breast, add 2 can of cream of chicken soup, 1 can cream of celery, 1 cup milk, 1 cup rice and some butter. Then I mix it and pour into a 9x13 pan and sprinke with grated parm chesse and bake at 350 for 1 hour. So simple and so yummy!! I'm actually making it tomorrow. I can't wait to try yours.

My 1,2,3 Recipe is White Chicken Chili

Cube and brown Chicken Breasts
Add McC#rmick White Chicken Chili Seasoning, 1 cup of water, 1 can of cannelini beans, 1 cup of frozen corn, and one can of diced tomotoes. Serve with a spoonful of SourCream or cheddar cheese!!

I love to make this & it doesn't take long. I make a batch of spanish rice & follow the directions to add a can of tomatos instead of water. Also brown some hamburger meat & cook green pepper & onion in it. Then mix the hamburger meat with the onion & pepper into the spanish rice. You can even add grated cheddar cheese. This tastes a little like stuffed peppers, but so much better!

Brown ground beef and onions and add the canned tomatoes and the 2-Alarm chili kit. Oh so easy and yummy.

Such a wonderful selection of recipes! One 1-2-3 recipe I have is sliced potatoes (or hash browns), eggs, and salsa. Really simple, but my family likes it (maybe with some cheese on top)!

Fajitas are go to meal. Saute some shrimp and veggies with some spices, stick it in a wrap and add some sour cream and guac. Ready is 10 minutes and so yummy.

My 1,2, 3 meal is Cop Out Chicken. 4T olive oil, 4 crushed garlic cloves, 1 t dried mint, 1 t oregano, 1 t salt, 1 t pepper, 2 T lemon juice. Mix in a bowl and add boneless chicken breasts. Marinate 30 minutes and grill. Serve with a simple salad.

My 1,2,3 meal . . . cook some chicken (cut into 1-inch cubes) with onion - at the same time cook pasta (I've used anything from spaghetti to bowties). When the chicken is beginning to brown - add a jar of spaghetti sauce. When the pasta is done - put some fresh spinach in the bottom of the strainer and pour the hot pasta over to drain. Mix the pasta and wilted spinach with the chicken mixture - add a bit of cheese and serve with garlic toast!

Love your blog. I especially love your posts about your balcony girls. I teach 6th grade girls on Sunday mornings and have borrowed some of your ideas. Love those girls. Our favorite easy meal is a crock pot meal. Spray crockpot with Pam. Layer 4 frozen chicken breasts, 4 slices of swiss cheese. Mix one can of your favorite cream of Chicken, mushroom, or celery soup with a can of milk and pour over the chicken. Melt a stick of butter and mix with a box of cornbread stuffing mix and layer on top of all the other items and cook on high for 6 hours. Wonderful.

Our 1,2,3 meal is beans and rice. If I haven't pre-cooked dried beans, I use canned cilantro lime black beans, then add some peppers and onions or some salsa and whatever leftover meat in the fridge that is suitable. It is a little different every time, but always good and our kids love it served up with sour cream and cheese.

One of my easy go to meals is what I will call "Cheese Burger in a Pocket". I really don't have a name for it. I use ground beef seasoned with whatever is on hand, maybe some chopped onion, taco seasoning, really whatever is on hand. Then I use the refriderator Grand size muffins. I flatten and spread them out with my fingers and place half of them onto a greased baking sheet. Then I spoon in the ground beef and shredded cheese into the center of the dough. I leave an edge so that I can place another piece of muffin dough (flatten and spread) over the pile and seal the dough discs together. This creates the pocket or pie. Then I bake them in the oven according to the directions for the refridgerator dough. Yummy!

My Split Peas & Ham soup!! SOOO easy!
Bag of split peas, 8 cups water, diced celery, carrots & onions and ham! Simmer 1 1/2 hours.
Seriously, THAT"S IT! And it's SOOOO yummy!
Serve with crusty bread and you've got yourself a meal!

Chrys' mother-in-law, Faye, emailed me THIS fantastic recipe tonight!
My recipe for Creamy Chicken Breasts:

Place 6 boneless, skinless, chicken breasts in casserole or cake pan.
Place 1 thin slice of Swiss cheese on each.
Spread 1 can cream of mushroom soup over all.
Sprinkle Pepperidge Farm Stuffing Mix over all.
Drizzle 1/4 cup butter over all.

Bake uncovered for 1 hour in 350 degree oven.

Love the scarves!

My family loves broccoli soup. Here's our very simple, quick recipe:

Saute 2/3 cup of leeks (or regular onions) until transparent.

Add 2 bunches broccoli and saute 4-5 minutes.

Cover with chicken broth, add a pinch of oregano and salt. and simmer 20 mins.

Blend until smooth. Garnish with sour cream or favorite cheese.

This is so easy even my husband makes it!

French's Onion Chicken ... YUM!! Dip thawed boneless/skinless chicken breasts in: melted butter + dash of dijon mustard + dash of worcestershire sauce .... then dip those moistened chicken breasts in a bag that has crushed french's onions (i usually add some seasoning in this bag). Lay coated chicken breasts in pyrex, cook for 25 min at 400. Moist and delicious every time!!

Secondly, I love all the great quick meal ideas. Our quick meal is quesadillas (guess I should learn how to spell it). We always have tortillas, a can a black beans, salsa and some cheese on hand. I throw some spinach leaves or other lettuce on top for our greens and the salsa for flavor. VOILA! Dinner.

I am so not gourmet. Now I need to scour your site for some entertaining recipes--main dishes and desserts...I need them desperately!

I LOVE chicken and rice casserole. A few years ago my friend Tiffany's parents had our small group Bible study over for a Christmas dinner. We were all single. Her mom made chicken and rice casserole and green beans, rolls, etc. for 15 or so of us and I tell you we couldn't have been happier. When you're single and get invited for a home cooked meal, many times the "homier" the better!

Our favorite 1-2-3 recipe is

tomatoes diced, goat cheese cut into chunks, olive oil, garlic, freshly ground salt and pepper. Then cook pasta, drain and stir into rest of ingredients. The warm pasta melts the goat cheese and uuummm . . . yum! Kelly

My 1.2,3 meal is 3 packet roast beef. Put a roast in the crock pot and sprinkle the contents of an envelope of Italian dressing, ranch dressing, and brown gravy mix over the roast. Pour in 1/2 cup of water and cook until done. Makes great sandwiches.

Our go-to dinner is gourmet and easy. Take chicken breasts (or thighs or anything you have) rub with minced garlic. Sprinkle with some dried rosemary and a few tbsp lemon juice. Bake at 350. Serve with rice and a veggie.

I think my easiest *go to* meal is Spaghetti Pie:
1. take a box of Kraft spaghetti dinner (the green box) and cook noodles as directed and make sauce as directed (although I like to add browned ground beef and canned tomatoes instead of just tomato sauce).
2. Rinse the noodles in cool water and add one beaten egg to them.
3. Layer 1/2 of the noodles, sprinkle with about 1 cup of shredded cheese; add the rest of the noodles, pour sauce over and then top with 1 more cup of shredded cheese. Bake @ 350F for about 30 min.
Delish!!

Pick me! Pick me! please! I stumbled onto your blog, it appears, just in time! My go to meal is great if you can avoid carpal from all the can opening! Taco Soup : brown/cook meat of choice (ground or cubed)- open cans of: tomatoes, tomato sauce, corn or hominy, Rotel, beans (& whatever else you're feeling), -toss in pot or crock, add taco seasoning, a cup of water, stir & heat thru. Done and yum! Top with taco type yummies and especially Fritos (kinda makes the dish).

p.s. - if I win.. I am not ignoring you. I'll be out of the country for a mission trip from the 28th thru 8th Feb.

Here's a 1,2,3 super quick recipe I found in the Kraft magazine (the one they used to send for free; now they send it to me on-line) for Speedy Chicken Stir Fry: http://www.kraftfoods.com/kf/recipes/speedy-chicken-stir-fry-107263.aspx

If I'm out of broccoli or don't want to deal with cutting it up, I use frozen green beans instead. I don't bother with cutting up the chicken either; I use chicken tenderloins and cut them up as they cook in the pan. I also leave out the crushed red pepper for my picky eaters who don't like anything spicy. It's quick and delicious!

I found you through Menu Plan Monday, BTW! :) We also had a chicken and rice casserole when I was a kid but I feel cheated- the one my mom made was just some yellow rice with chicken on top and it usually came out with burned bits and crunchy rice!

My 1,2,3 dinner is Peachy-Pork Picante:
1 pound boneless pork chops, cubed and tossed with taco seasoning. Brown in a little olive oil until cooked through. Add one cup salsa and one cup peach (or apricot or mango or other fruit) preserves. Simmer until warm and serve over rice.

Everyone in my family loves this one, even the picky eater! Thanks for the great give-away!

Quick and Easy meal at OUR house is PANCAKES! Bisquick, extra eggs, milk and a pinch of sugar. I make silver dollar size and serve with an individual little bowl of syrup. Brown and Serve Sausage is an added bonus and heat up in minutes.
Even as an adult, I LOVE pancake nights.

Hi Sandy, Just try your recipe in the crock pot than no one has to even remember to put it in the oven. I did pork chops this week with cream of mushroom soup, 1 chopped onion, 1/4 cup water,1 tsp thyme & rosemary, and 1 cup of white wine.

When I got home all I did was make some basmati rice. My mom’s recipe updated :D

My easiest dish is a family favorite plus when you re-heat for leftovers it tastes even better. Add a nice salad, and some crusty bread with EVO and parmasean cheese freshly grated for a more classy dinner. This is my grandmother's recipe.

(Grandmom's Beef Casserole)

1 lb. elbows cooked then drained, 1 lb. hamburger cooked and drained. Set oven to 350 degrees. Dump elbows,hamburger, 2 bags of extra sharp white chedder, and 2 cans of stewed tomatoes juice in a buttered casserole dish. Mix and put a few pats of butter on top with fresh ground pepper and kosher salt. Put in oven 25 min. until bubbly. It's a hit everytime! Especially with 4 kids.

throw in a crock pot (or dutch oven) cook until you can shred chicken breasts with a fork.

Here's my easy as 1,2,3 meal--one skillet dinner. Brown ground beef with a chopped onion, and if desired a clove of minced garlic. Drain. Add 1 can Rotel, 1 can corn, and 1 can rinsed black beans. If you prefer to add minute rice then leave the juices. If you have prepared rice drain the cans. Cheese is a nice topping. Enjoy!

My 1-2-3 is bean burgers. Mix together a can of bean & bacon soup with a can of any white beans. Heat in microwave. Toast some buns under broiler, then top with bean mixture, cheese slice and onion (if desired) put back under broiler to melt cheese. Watch close only takes a second. Dinner is served.

There is nothing like Chili-O mix, canned tomatoes, kidney beans and a pound of ground round. (recipe on the chili-o mix packet) It is low fat, healthy, and delicious. I have had people ask me for the recipe! Add a bag salad if you want, some crackers and a big glass of milk. I think that is what we are having tonight!

Great scarves! :) One of our recent favorite easy dinners is Skillet Turkey Tetrazzini. Using leftover turkey, onion, water, cream of mush. soup, cheese, parsley, pimentos, & hot cooked spaghetti. Combine & heat for a few minutes in the skillet. SO fast & easy, and a great way to use up leftovers!!

Oh, and I would definitely serve your chicken casserole to guests! It would be great for a casual get-together. Actually, one of our favorite meals friends served us was the most amazing homemade chicken noodle soup!! SO good! With a salad and bread, it was incredible, especially since we don't make that ourselves! Sometimes simple and homemade is best! :)

Put a chuck roast in the crockpot, cover with a jar of pepperocini peppers, and cook all day. Shred beef and pepppers and serve on buns. This is simply awesome!

My 1,2,3 meal

1 lb hamburger browned
1 can cr of "whatever" soup
Egg noodles--I usually use about 3/4 of a 16oz bag.--boiled and drained.

Mix everything together and heat through. sometimes I add a couple dollops sour cream and a few shakes of worchestersire.

SUPER easy and very yummy!

One of my easiest meal is also one of my family's favorites: French Dip!
3 lb shoulder cut roast
2 cups water
1/2 cup soy sauce
1 teaspoon each of: Dried rosemary, dried thyme, garlic powder.
1 bay leaf
3 to 4 peppercorns
Place roast in slow cooker. Add rest of ingredients. Cook on high for 6 hours. Serve on rolls with cheese and pour broth in bowls for dipping!
Yum!

My 1-2-3 meal is pre-marinated chicken fajita meat. Our HEB brand is the best and I try to keep it in the freezer, I can just throw it on the grill or in the oven. Living here in San Antonio, we always have fresh tortillas on hand or use it in a salad with canned pinto beans, cheese, green onions and tomatoes add crushed tortilla chips for a quick taco salad.

My 1,2,3 meal is chicken pot pie:
Chicken breast - cooked however you want.
Mixed Vegetables
Cream of whatever soup
rinse the can with milk

Mix it all up and put it in an already made pie crust. Bake and enjoy. I've also used left over beef roast or venison instead of chicken. Enjoy.

Beautiful scarves! My easy meal is Chili Rubbed Salmon. Cut up two zucchini's and toss with a little salt, pepper, and chili powder. Put on cookie sheet lined with foil. Take 4 6oz. portions of salmon and lay on top. Coat with chilli powder, salt, pepper and just a little EVOO. Bake at 375 for 8-10 minutes. Serve with salad!

My family favorite 1,2,3 meal is an easy omelet. With a family of seven (5 kids from 9-15) its important to have a few 1,2,3, meals on hand. Eggs, frozen spinach, and cheese-- its done. I thaw the spinach in the microwave and season with salt and pepper. As the egg cooks, sprinkle with spinach and whatever kind of cheese I have left over from another dish. Add a slice of toast or fruit to the plate (whatever I have) and it makes a delicious comforting anytime meal! (saverette_501@msn.com)

Chicken fettucine:
1. Boil fettucine noodles
2. Brown cubed boneless, skinless chicken breasts
3. Mix large can cream of mushroom soup, 1 cup milk, 1 cup shredded or grated parmesan cheese, steamed broccoli.

Here's a fam staple:
Hot Hominy Beef-brown a pound of ground beef; drain. Add jar of good salsa, a can of tomato sauce, and a large can of hominy; spice it up with garlic, cumin, oregano, and a splash of Tabasco. Simmer for 20. Serve over brown rice with a salted avocado-cucumber salad spritzed with lime.

My quick meal is Chili in the crockpot. I just cook ground beef then throw all the ingredients in and let it cook on low most of the day. I just love the crock pot! My favorite "quickie" dinner of late is crabsoup in the crockpot. I can crushed tomatoes, i large can V8, 1 package mixed frozen veggies, 1 pound crabmeat (shells picked out) and 2 tblspoons Old Bay. Heat in crockpot for 8 hours on low. Serve with warm bread.

My 1,2,3 meal is a recipe I discovered years ago in a Campbell soup recipe booklet. In a large saucepan saute 2 large zucchini until tender, season with 1/4 t. garlic powder, add 2 cups of chicken broth, 1 cup of water, 1 14-oz. diced tomatoes. Bring to boil and add 1/2 c. pasta, when al dente, add 1 can of kidney beans. Takes about 15-20 minutes. Serve with baquette.

Oh, my glory -- look at all the comments!

Well, I make a dish similar to yours, but I make it in the crock pot... and the picture of all your "in-stock" items looks like you peeked into my pantry! lol!!

For an easy meal, I take one refrigerated pie crust (2 to a box, which I always have on hand in the fridge), 1 large can of cream of mushroom soup, 1 can of diced carrots, 1 can of diced potatoes, 1 can of peas, 4 chicken breasts boiled and shredded (or leftover chicken shredded), thyme, salt, pepper and garlic powder. Place one of the pie crusts in a pie dish. In a large bowl, mix the cream soup, chx, and drained veggies, thyme, salt, pepper and garlic powder (to taste) together. Pour into the prepared bottom crust. Place top crust over mixture, crimp edges and bake until crust is golden brown and delicious (about 35-45 minutes at 350 degrees). You can add cheese if you like. If I’m not in a hurry, I’ll make a white sauce from scratch, add fresh mushrooms, and use fresh veggies that are par-boiled instead of canned veggies, and frozen peas. Very similar to your pot-pie, but I do NOT make my crust from scratch, as I’ve messed up more pot-pies than I care to think of.

My favorite 1,2,3 meal is also a chicken and rice dish:

1 to 1 1/2 lb chicken breast, cubed
2 cups Minute Rice (brown or white)
2 cups water
1 cup milk
1 stick butter or margarine, melted
1 package dry ranch dressing mix

Preheat over to 375 degrees. Grease 9x13 pan.
Mix all ingredients in large bowl.
Pour into greased pan and bake for 45 minutes.

Believe it or not, fish is our easiest, quickest meal. My mom never cooked fish for us growing up and I figured it was so HARD to make! Not so, she just didn't like it! So I can prepare tilapia with lemon butter sauce, couscous (toss in some feta and fresh tomatoes) and blanched broccoli or snap peas, and you have a meal from start to finish in 15 minutes. It's also one of the kids' favorites! Love those scarves!

For my 1,2,3 meal..........
Poppy Seed Chicken
Lemon Pepper 4-6 chicken breasts and cook on the stove top in a little bit of olive oil. Cube the chicken into nice sized one inch cubes and place in a mixing bowl. Add a can of cream of chicken soup, a can of cream of mushroom soup, some sour cream and a tablespoon of poppy seeds. Pour mixture into a casserole dish.
Melt 1/2 stick of butter and pour over 40 crushed Ritz crackers in a small mixing bowl. Stir together and then sprinkle over top of chicken mixture in casserole dish. Bake at 350 degrees for 30 minutes or until heated through!
Enjoy! My family certainly does!

Love the look of those scarves! An old standby here is Pate de Chinois or Shephard's Pie to you english people. Our dish translates with something chinese in it...just weird the french up here...anyway....Fry up a pound of hamburger with a chopped onion. Add s/p and a sprinkle of adobo seasoning or garlic powder. Add a can of creamed corn and pour into a small casserole. Mash some boiled potatoes with butter, milk and s/p. Cover filling. spinkle with paprika bake 350* for 30-45 min. Hubby's favorite.

My sons favorite fast meal is tuna noodle casserole. I mix a can of cream of mushroom, sour cream, a can of tuna and some seasoning salt. Cook noodles of your choice and add to sauce mixture. Top with fried onions. WE love it!!!

Hmmm...easy 1,2,3 would have to be Company Chicken:
cream of celery soup
1/4 c. cooking wine

mix and pour over chicken breasts in 9x13

Top each breast with a slice of swiss cheese. Top all with a few handfuls of salad croutons, then add little chunks of butter across all (maybe 3-4T total).

Bake at 350 uncovered 1 hour. Delish!

Love, love, love your post. I don't have a 1-2-3 recipe but I do make use of my Supermarket ready made items. Roasted chicken can become eggrolls with added pre-packaged coleslaw mix, eggroll wrappers and a few pantry items. It can also be combined with Bear Creek Chicken Noodle Soup mix and Bisquick dumplings for a homey meal. I work full time so my shortcut foods are my friends. The reason why I wanted to comment was ~~ you and your daughter are absolutely beautiful!

i might be too late but my favorite is tuna casserole. with whole wheat pasta, cream of chicken soup, sour cream, garlic powder and other yummy seasonings.

Our favorite is:
Shrimp & asparagus
Saute small onion with 2 clove garlic in 3T. Butter & 3T olive oil.
Add 1/2 tsp.thyme & Basil
Add Fresh asparagus saute a few minutes.
Add 1 lb. Shrimp saute till done.
Squeeze 1/2 lemon over.
Serve over cooked Angel Hair pasta.
Squeeze more lemon

My easiest dinner? Take a roast out of the freezer and into the crockpot, sprinkle with saltless seasoning, add a little water. Leave the crockpot on low all day and it's ready for dinner!

My easiest 1-2-3 dinner is Chicken Tetrazini. Cooked chicken, uncooked thin spaghetti, cream of chicken soup and broth. Cover with parm cheese and paprika and simmer covered for 30 minutes. Add a salad, and viola! Dinner. :D

this may be cheating a bit, but last night I made this...

1. boil 8 cups of water
2. add Bear Creek potato soup mix
3. cook on med for 15 min.

Tada! Potato soup and I made grilled cheese to go with it. Perfect for an icy Arkansas night!

Love the scarves...would be quite useful today!!

just put one in the crock pot today.

1. put chunks of celery, onion and carrot in bottom of crockpot

2. put roasting chicken (to feed our family of 11, i put in 2) on top

3. sprinkle with seasoned salt

put on lid, turn to high, cook for 6-8 hours.

I am really enjoying reading through the quick meal ideas!
My quick meals are usually enchiladas.
I also put chicken or a roast in the crockpot.
The scarves are beautiful but I don't need one in Florida...land of the mosquitos even in January.

Our favorite speedy meal is Tomato Soup, like this:

Saute one minced onion and a clove of garlic, along with sea salt and fresh or dried dill, in a little olive oil, until soft. Add a 28-oz can of diced tomatoes (or 2 14-oz cans Hunt's fire-roasted...great flavor!). Warm through. You can also add in a cup or so of leftover rice, or 1/2 cup of raw rice, simmering until it is done. Dinner! (Streamlined, tame version of Molly Katzen's Spicy Tomato Soup.)

Okay my quick fix mean is Quick Tacos
1lb burger browned and drained
1 can cream corn
1 can kidney beans drained
1 package of taco seasoning

Mix all ingredients over med heat 10 mins. Spoon over tortillas add your favorite taco toppings!
Enjoy.

I really had to laugh when I saw this Chicken & Rice Casserole recipe with your comments. I made this for my family so often, They now refuse to eat it. Even tho I still like it . . . I now make a Chicken & Stuffing Casserole. They all love it with Cranberry Sauce, Peas & Banana Pudding . . . I love your Blog . . .
